Parsnip and Split Pea Soup

Just made this and it is delicious.  Couple of things though - use double the amount of stock and cook for about an hour, not 10 minutes, or the rice and split peas don't cook and are still raw and crunchy.  Didn't need the lemon or coriander on top at the end, but putting the tzatziki in was the icing on the soup, so to speak.

I'm having some now for dinner, it's great!
But yes you need a lot more stock.

Hi Do you need to soak the Split Peas and rice overnight?

i didn't- i only soaked them while i was preparing the vegies etc.
But I did also cook my soup in the morning for lunch, it it had longer "soaking" time.... Not sure if that really made a difference tho.

sounds like a great soup! if only i had bought parsnips yesterday! ah well, will have to wait until next weekend now! but sounds yum!

With my scrambled brain atm I walked past the parsnips and searched 5 shops before I found a turnip. Doh!
